Kentucky ‘Nanner Foster Waffles
Serves 4 to 6
Ingredients:
For the Waffles:
- Nonstick cooking spray
- 2 cups all-purpose flour
- 1/4 cup white sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 eggs
- 1 1/2 cups milk (any variety)
- 1/2 cup butter, melted and cooled
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
For the Topping:
- 1/4 cup butter
- 1/4 cup packed brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 bananas, sliced thick
- 3 teaspoons bourbon (or apple juice as a substitute)
- Favorite vanilla ice cream
Instructions:
- Preheat a waffle iron and spray with nonstick cooking spray. Preheat oven to 170°F.
- Make the Waffles:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the eggs and milk. Add melted butter, vanilla extract, and cinnamon. Mix well.
- Combine the wet and dry ingredients, whisking until smooth and lump-free.
- Pour 1/2 cup of batter onto the preheated waffle iron, close the lid, and cook until golden brown and crispy. Repeat with the remaining batter.
- Place cooked waffles on a sheet pan and keep warm in the preheated oven.
- Prepare the Topping:
- Melt butter in a medium skillet over medium heat. Add brown sugar, cinnamon, and nutmeg. Stir and cook for about 1 minute.
- Add sliced bananas and cook for a few seconds. Pour in the bourbon (or apple juice) and cook for 2 to 3 minutes, stirring gently so bananas do not break up.
- Assemble the Dish:
- Place 1 to 2 waffles on each plate and top with a scoop of vanilla ice cream.
- Spoon the banana sauce over the ice cream and waffles.
- Serve immediately and enjoy!
Feel free to adjust the bourbon amount or use apple juice based on your preference for a non-alcoholic version.
